Butchering in Aboriginal communities

Many Aboriginal communities in the north-west have their own livestock to supply the meat needs of the community. Some are expanding their operations and are supplying other communities as a service and as a commercial enterprise. This butchering course was conducted in response to requests to Technical Education Division Aboriginal Access, to service three communities near Broome in Western Australia. The teaching aims of the course were: (1) to clean and bleed cattle, sheep and pigs; (2) quartering a carcass; (3) to produce attractive cuts of meat; and (4) hygiene in the handling of meat.
