Abstract |
'Training & employment' is a quarterly English-language newsletter aimed at informing the international community about research and other activities undertaken by the Centre for Research on Education, Training and Employment (CEREQ) in France. The article in this issue compares the employment and career advancement possibilities in hotel and catering jobs in France and the US. France and the US have been exchanging expertise in this industry since the 1970s with France exporting its cooking expertise and the US establishing large hotel and catering chains in France and introducing new management methods and approaches to servicing large numbers of guests. Although the industry in France is still dominated mainly by self-run enterprises, the growth in American outlets in France will likely lead to an increase in the share of supervisory, management and marketing functions. In addition, French advances in the constitution of different occupations and hotel management training may also enhance employment prospects for the industry. The article takes a prospective look at employment possibilities, the characteristics of the French hotel and catering industry workforce, and the two training systems (French and American) for a single employment structure. |
