This learning activities material has been developed for use within the module 'Wine service'. It has been designed to be used in a self-paced, competency-based, well-resourced situation. This module aims to enable the student to acquire knowledge and practical expertise in what is involved in the day-to-day life of a wine waiter. The topics are: (1) serving beverages in the appropriate sequence, (2) identifying wine service glassware, (3) identifying wine service equipment, (4) taking and processing a beverage order docket, (5) tray service, (6) opening/serving white wine and rose, (7) the serving and decanting of red wine, (8) the service of sparkling wines, and (9) choosing the right wine to complement the food.
