This paper reports on the development of a mixed mode of delivery for an NVQ (National Vocational Qualification) course in catering skills in a College of Further Education. The mixed mode of delivery incorporates elements of practical experience, supported self-study and instructor-led workshops. The advantages of such a delivery system are seen to be a more effective use of resources and staff while at the same time providing a flexible program of study for learners with different backgrounds and experience. One of the main problems identified in the study is the reluctance of less experienced learners to accept responsibility for their own learning. The need to offer guidance and counselling to school leavers encountering flexible learning programs is emphasised together with the additional benefits conferred to all students by the flexible approach.
