Communication and catering competencies: a case study of literacy and numeracy inclusion in a training package

This report is part of a broader national project whereby the six ALNARC (Adult Literacy and Numeracy Australian Research Consortium) centres have designed an integrated research process to highlight the current and possible difficulties and propose solutions to ensure that language, literacy and numeracy (LL&N) skills development and assessment are attended to as training packages are implemented and delivered within Australian workplaces. This Tasmanian report looks at the implementation of the Hospitality Training Package particularly in relation to regional and rural centres. The project aims to: - examine the implementation of training packages in one industry, namely hopsitality (Certificate III in Hospitality (Catering Operations)) - examine for accuracy and comprehensiveness of description the literacy and numeracy competencies detailed in relevant units of the Hospitality Training Package, using document analysis techniques to assess discursive factors affecting clarity, readability and with the potential to affect delivery - examine the literacies of the workplace and of the training as manifest in context, and in the views of trainees using Hospitaltiy and Community Serivce Training Packages, their training providers and workplace management. The Tasmanian context is unique, with implementation occuring in an ageing rural settings often involving special needs groups. Extensive research findings include: - there has been insufficient time to guage the shift from curriculum based training to training package dleivery - there has been no major change in delivery or assessment modes for Certificate III strategies for dealing with L L&N have not been a priority - units of the Hopsitality Training Package have an 'uneven' prescence of literacy and numeracy competencies.
